We use top quality healthy olive and canola oil. We use Texas Honey instead of sugar which cost more, is better for you, and enhances the taste. We use lemon juice instead of vinegar which provides vitamin C instead of empty calories. We use pasteurized egg yolks which extend useful shelf life and reduce potential health problems. We use white freshly ground pepper for better taste and appearance. We use top quality fresh garlic, macerated in oil for maximum health benefits. We use top quality Dijon mustard for great taste and appearance. We use buttermilk instead of whole milk for reduced fat and enhanced taste.

Premium mustards create the great taste and stimulate appetite; top quality spices enhance the flavor and provide ancillary benefits. Freshly ground black pepper is in both the salad and on the steak. The benefits of Wasabi and horseradish are legendary. Top quality winterized soybean oil emulsifies and blends while providing necessary viscosity to make this dressing “pourable”. (Shake well before using.) This dressing calls for a high quality rice wine vinegar and onion for a complex and satisfying taste on meats and salads.

Tantalizing smells of roasting garlic, fresh cilantro and Llano Estacado Chardonnay create the drama of this dressing. This creamy dressing combines pasteurized eggs, lime juice and seasonings to create a perfect accompaniment for mesquite grilled shrimp, baby bella mushrooms and baby spinach. Great as a sauce or dip for shrimp or fish in any dish. After you taste this you will throw out your other seafood accompaniments.

Refrigerated

Using the best ingredients without preservatives, stabilizers, gums or additives requires refrigeration with associated costs for smaller manufacturing lots, stocking, delivery and shrinkage. These dressings also uses no preservatives other than those inherent in the mustards and buttermilk so it must be refrigerated. Even though you will want to use these dressings as a sauce, dip, marinade and glaze for meat and seafoods, they will still be in the refrigerated salad section of your store.

June 14th 2004 several members of the Fort Worth Chapter competed with their best concepts for this dressing. All would be worthy of producing, but only one was the winner.

August 17, Chefs from Houston, Corpus Christi, Galveston and the East Texas Chapters competed at the San Jacinto College North campus culinary school.

Buttermilk

We use Oak Farms buttermilk made in Texas which contains a small amount of preservative required by federal law. Buttermilk is lower in fat than regular milk, since the fat has been removed to make butter. It is also high in potassium, vitamin B12, calcium, and riboflavin as well as a good source of phosphorus. Those with digestive problems are often advised to drink buttermilk rather than milk, as it is more quickly digested. Buttermilk has more lactic acid than skim milk. Endive

Endive contains in the leaves a bitter substance called intybin, which acts as a mild appetite stimulant and digestive aid; so it is particularly appealing in hors d'oeuvre salads. Currently being studied as a stimulant for bone growth and digestive improvement.

NUTRITIONAL BENEFITS: A member of the chicory family, endive is a good source of beta-carotene, folic acid, and potassium.  It has a pleasant bitter taste.

Asparagus

With its uniquely delicate flavor and texture, asparagus is the quintessential "luxury" vegetable. Enjoy it in season, when the price goes down: Asparagus contains a good supply of folate (folic acid), as well as some vitamin C and, in green asparagus, some beta-carotene. Asparagus also contains the phytochemical glutathione, which has antioxidant and anticarcinogenic properties.

Vitamin C is a powerful antioxidant and anti-inflammatory reducing development of asthma symptoms. Pine Nuts

Pine nuts are technically not nuts but kernels. If you are allergic to other nuts, you might also be allergic to these and should leave them off of your salad.

They are also high in mono and poly unsaturated fats which reduces cholesterol levels. Research consistently shows that people who frequently eat nuts have a dramatically reduced risk of heart disease at least in part because nut consumption lowers cholesterol levels.

Pine Nuts (and many other nuts) also contain alpha-linolenic acid which has a small correlation to prostrate cancer.
