Using the best
ingredients without preservatives, stabilizers, gums or additives requires
refrigeration with associated costs for smaller manufacturing lots, stocking,
delivery and shrinkage. These dressings also uses no
preservatives other than those inherent in the mustards and buttermilk so it
must be refrigerated. Even though you will want to use these dressings as a
sauce, dip, marinade and glaze for meat and seafoods,
they will still be in the refrigerated salad section of your store. |

Lime Juice is great for cleaning your teeth or palate but also
adds great flavor to shrimp and fish. Reported health benefits-Lime is motivating, relieving depression and
increasing morale. Lime is slightly photosensitizing to some skin. |

Lemon or vinegar? Dieticians recommend lemon as it is a source of
vitamin C, which protects against infection and is essential for the
absorption of iron in food (e.g. meat, pulses) by the body. In addition,
vitamin C is an anti-oxidant and delays the oxidization of ingredients in
salads. Vinegar, by contrast, has no health benefits. It simply adds flavor
to food and salads. |

Endive
|
Endive contains in the leaves a bitter
substance called intybin, which acts as a mild appetite stimulant and
digestive aid; so it is particularly appealing in hors d'oeuvre salads.
Currently being studied as a stimulant for bone growth and digestive
improvement. NUTRITIONAL BENEFITS: A member of the
chicory family, endive is a good source of beta-carotene, folic acid, and
potassium. It has a pleasant bitter taste. |

Tomato provides lycopene
an important antioxidant. Tomato is particularly beneficial when

nuts are technically not nuts but kernels. If you are allergic to other nuts,
you might also be allergic to these and should leave them off of your salad. They
are also high in mono and poly unsaturated fats which reduces cholesterol
levels. Research consistently shows that people who
frequently eat nuts have a dramatically reduced risk of heart disease at
least in part because nut consumption lowers cholesterol levels. Pine
Nuts (and many other nuts) also contain alpha-linolenic
acid which has a small correlation to prostrate cancer. |
Free Calories??? Although nuts
are loaded with calories, a preliminary trial surprisingly reported that
adding hundreds of calories per day from nuts for six months did not increase
body weight in humans—an outcome supported by other reports. Even when
increasing nut consumption has led to weight gain, the amount of added weight
has been remarkably less than would be expected given the number of calories
