Chef Englund's Winning Steak Salad
Texas Wine Pairing: Llano Estacado Cabernet/Shiraz.

Ingredients to serve 6
30 oz. of
sirloin steak at least 1” thick covered thoroughly in fresh black peppercorns
and grilled to your taste, a French loaf, spring mix of greens, Roma
tomatoes, garlic butter, red onion, and gorgonzola cheese,
Slice the
French toast on the bias and toast on one side after dipping in melted garlic
butter. In chilled plates center a handful of spring mix with toast around
outside with tomatoes between. Place the thinly sliced sirloin on the top and
scatter julienned red onion and gorgonzola over the salad and drizzle with
the Ft.Worth 2004 3-Mustard Wasabi Vinaigrette adding a drop pattern around
the plate.

Opened the new dressing. It is great on London
broil sliced extra thin with jalapeno cheese on a potato roll. Makes my
mouth water just thinking about it.
