Chef Jones Winning Shrimp Salad

Gather Ingredients for 4 salads or entrées: Enough large shrimp for the occasion, mesquite wood or smoky flavoring, 4 tomatoes, 1 medium cucumber, 4 oz. baby spinach, 4 oz. baby-bella mushrooms, and Houston 2004 dressing.

Grill the shrimp and baby bella mushrooms over mesquite wood or season and refrigerate overnight then grill. Alternate peeled and sliced tomatoes and cucumber slices on the plate in a pinwheel circle. Place the baby spinach in the middle of the tomatoes and cucumbers and top with the mushrooms, then the shrimp. Drizzle a tablespoon of dressing over the shrimp and another over the tomatoes and cucumbers.
