Grilled Chicken Marinade

Combine 1 cup of PLANO 2004™ Dressing with 1/4 cup Olive
oil and ½ cup rice wine vinegar and place 4-6 chicken breasts in solution for
two hours. Grill chicken breasts slightly longer than you would normally to
compensate for the extra moisture. Cook to an internal meat temperature of
165°F

delighted with Flounder, Chilean Sea Bass, and Tilapia with the same
excellent results as Salmon. We have also
pan-seared and baked with Plano 2004 as a topping to the delight of
customers.

Ingredients-Serves 6

1 Jar Winning Recipe “Plano 2004”
2 lb Fresh Salmon (filets, steaks, skin or
skinless)
1lb Asparagus bunch, fresh
½ lb bacon thin or thick sliced
|
1 head of Iceberg Lettuce
1-2 tomatoes-small
Blue Cheese Dressing
Blue Cheese Crumbles (Gorgonzola, or l’abeurge)
to taste Salt and Pepper

Start the bacon frying. Wash and drain the lettuce and
tomatoes. Slice the lettuce into wedges and arrange on chilled plates.
Sprinkle with diced or cherry tomatoes, drizzle the blue cheese dressing
and scatter blue cheese crumbles.
Tear a sheet of aluminum foil large enough to wrap one
piece of the salmon. Place the cleaned fresh salmon on the aluminum foil
(skin side down if applicable). You can add any of a variety of herbs or
condiments at this point. Fresh chopped dill, rosemary, basil, thinly
sliced jalapenos, mushrooms, and/or lemons are our favorites. Now, slather
the salmon with Winning Recipe “Plano 2004” and seal securely in the foil.
Place on a medium to hot grill with the lid closed and cook until the
internal meat temperature is 140° F-160° F. (about 14 minutes). In the oven
we recommend a temperature of 375° F for 25 minutes.
When the bacon is about ¾ done (still soft enough to
wrap the asparagus), remove and wrap about 6 pieces of washed and trimmed
asparagus in a slice of bacon. If desired, drizzle some of the bacon fat on
these “packages”. Add asparagus to the grill and cook approximately 3
minutes per side.
Slice and divide salmon onto 6 heated plates, add
asparagus, drizzle 1T of Winning Recipe “Plano 2004” on each bunch and
serve with the salad.

Plate the fish and drizzle 1T dressing on asparagus and
serve.

Necessity was the mother of invention. During a tasting
we ran out of the Belgium Endive for the Winning Recipe Plano 2004 Salad.
Plenty of Roma tomatoes. full ripe avocados and the expertise of Chef Hawkins
and Morgan, one of her student chefs, created this recipe which is the
favorite of our chefs.
Presentation will vary with the style of the chef, but
slice or cube a layer of tomatoes, cover with half-cubes of avocado, sprinkle
generously with Italian bread crumbs, lace with Sweet Creamy Garlic Dressing
cover with grated parmesan cheese and broil until the cheese starts to brown.
Serve with a dollop of Dressing on top.

night.....my husband put the Sweet Creamy Garlic Dessing all over them and
let them marinate a couple of hours, then broiled them! They were

Fried Catfish
|
Add Cornmeal to “Sweet Creamy Garlic Dressing” and dip
catfish fillets before frying. Great flavor that will make you love catfish.

Salad Appetizers
|
Scoop the seeds out of Cherry or small roma tomatoes,
top with Feta Cheese and a topping of “Sweet Creamy Garlic”.
Toast Pine Nuts and chop together with an equal portion
of feta cheese. Top broccoli, tomatoes, or cauliflower with this mix and
cover with “Sweet Creamy Garlic Dressing”.

Dipping Sauce
|
Use as a dipping sauce for almost any fried food,
particularly fried oysters or onion rings. Also excellent with any salad or
vegetable that is slightly bitter, i.e. broccoli, cauliflower, arugula,
Frisée, mizuna, or blanched green beans

Instant Garlic Toast
|
Spread Sweet Creamy Garlic Dressing on any toast and you
have instant garlic toast. Or drop a half teaspoon between slices before you
warm French or Italian loaves

Creamy Garlic Caesar
|
Combine small pieces of torn romaine lettuce, add Sweet
Creamy Garlic Dressing to taste, top with garlic croutons and parmesan
cheese.
